Seasonal produce guide: what to grow and when

Plan a productive growing calendar with crop ideas for every season, along with practical guidance for succession planting, harvest timing, and crop rotation.

A useful seasonal planting guide cannot begin with a national calendar. “Plant carrots in March” may be sensible in one county and impossible in another. Elevation, latitude, frost, heat, rainfall, wind, soil, tunnels, and the market all change the answer. The right calendar is a local operating plan built from those conditions.

For a farmstand, timing matters twice. A crop must grow well, and it must be ready when customers want to buy it. Ten beds of lettuce maturing together can create more waste than profit. One steady succession that fills the display every weekend is usually more valuable.

Use this guide as a framework, then adapt dates with your own records, seed information, and advice from a local Extension office or experienced grower.

Establish the dates that shape your season

Start with the average last spring frost and first fall frost for your location, but do not treat averages as promises. Find the range of recent frost dates and note cold pockets on your property. A low field may freeze when a slope remains safe. South-facing walls warm early; exposed ridges can stay cold and windy.

Track three kinds of temperature:

  • Air temperature affects frost injury and heat stress.
  • Soil temperature influences germination and root activity.
  • Protected-space temperature can swing much higher or lower than expected if a tunnel is not ventilated or covered correctly.

Record actual dates on your farm: when the soil becomes workable, when major weeds germinate, when fruit trees bloom, when summer heat begins, and when daylight and cold slow growth. After a few seasons, these observations become more useful than a generic chart.

Know the approximate frost tolerance of each crop and variety. Mature kale may tolerate cold that would damage a tender transplant. Cold-hardy does not mean invulnerable, especially after warm weather has reduced acclimation.

Plan backward from the sales window

Seed packets list “days to maturity,” but that number may begin at seeding or transplanting and usually reflects favorable conditions. Add time for germination, transplant production, establishment, slower growth in cool or dark weather, and a harvest window.

Suppose customers look for slicing tomatoes in early July. Work backward from that goal using the variety's transplant-to-maturity estimate, expected transplant date, seedling age, and a buffer for spring weather. Then compare the plan with the farm's frost protection and labor. The date on paper must still produce a transplant you can safely set and maintain.

For direct-seeded crops, calculate the first harvest and the duration of useful harvest. A radish variety listed at 25 days may take longer in cold spring soil. Beans can mature quickly in heat but produce for only a limited period. Schedule the next sowing before the first one fades.

Replace “local date” with dates based on your farm. The important part is connecting sales, space, and the crop that follows.

Spring: build momentum with cool-season crops

Spring favors crops that germinate or grow in cool conditions, but wet soil can be a bigger limit than cold air. Working saturated ground damages structure for the rest of the season. Prepare beds in fall where appropriate, improve drainage, and wait until soil crumbles rather than smears.

Common spring farmstand crops include:

  • Salad greens, spinach, arugula, kale, and chard
  • Radishes, turnips, beets, and early carrots
  • Snap, shelling, and snow peas
  • Scallions and overwintered onions or garlic
  • Cilantro, parsley, dill, chives, and cool-season herb starts
  • Asparagus, rhubarb, and strawberries where established

Use row cover or a low tunnel to moderate wind and cold when the crop and system are suited to it. Secure covers carefully, ventilate when necessary, and remove or manage them around pollination for crops that require insect visits.

Spring customers respond to freshness and the return of variety. Pair fast crops with storage products, eggs, plants, or other legal offerings to make the early stand feel useful. Do not overplant greens merely because they mature quickly; harvest and cooling capacity often become the real constraint.

Plan bed turnover before planting. Radishes may be followed by beans, spinach by cucumbers, or early lettuce by a fall root crop later in the year. Avoid successions that transfer a serious pest or disease problem directly to a related crop.

Summer: manage heat as carefully as growth

Summer brings the crops most associated with farmstands: tomatoes, peppers, eggplant, cucumbers, squash, beans, sweet corn, melons, berries, basil, and cut flowers. It also brings irrigation pressure, weeds, insects, storms, sunscald, and a heavy harvest workload.

Warm-season crops should not be rushed into cold soil just because the calendar says spring frost is over. Chilled plants may stall and lose the head start you hoped to gain. Use soil temperature, the forecast, transplant condition, and protection capacity to choose the date.

Stagger plantings for crops with a concentrated harvest. Sweet corn is often planned by maturity group or successive plantings so every block does not ripen together. Bush beans and cucumbers also benefit from planned replacement. Tomatoes may be staggered, but variety, disease pressure, trellising, and pruning workload are equally important.

During high heat, keep shallow-rooted crops and new transplants from cycling between drought and saturation. Mulch and drip irrigation can moderate moisture. Provide shade only where the crop and local climate justify it, and secure any cloth for wind.

Harvest timing affects quality. Pick during the cooler part of the day when practical, move produce out of sun quickly, and use crop-appropriate cooling and storage. Tomatoes, basil, cucumbers, greens, and potatoes do not all want identical temperatures. A beautiful summer harvest can deteriorate before the stand opens if postharvest handling is treated as an afterthought.

Fall: plant while summer is still busy

The most common fall-garden mistake is waiting for cool weather before sowing. Many crops need to be established while days are still hot because growth slows sharply as daylight declines. Count backward from the first frost, add extra time for shortening days, and consider when summer crops will release bed space.

Strong fall offerings include:

  • Kale, collards, chard, and hardy salad greens
  • Broccoli, cabbage, cauliflower, and other brassicas suited to the region
  • Carrots, beets, radishes, rutabagas, and turnips
  • Leeks, scallions, and herbs that tolerate cooler weather
  • Winter squash, pumpkins, potatoes, onions, and garlic harvested for storage
  • Apples, pears, grapes, or nuts from established plantings

Transplants can help fall brassicas clear the seedling stage before field space opens. Protect young plants from heat and pests, and choose varieties by local disease and maturity needs. Direct-seeded fall carrots and greens need dependable surface moisture during germination.

Frost can improve the eating quality of some hardy crops, but protect marketable leaves from wind, mud, and repeated damage. Tunnels and row cover may extend harvest; they do not create midwinter sunlight. Plant enough biomass before the low-growth period begins.

Fall is also a major display season. Pumpkins and winter squash hold attention, but only cured, sound products should be stored. Keep them dry, ventilated, protected from freezing, and checked for decay.

Winter: sell from planning, protection, and storage

In mild climates, winter may support active field production. In colder areas, it is often a mix of protected greens, roots held in the ground under careful management, and crops harvested into storage. Your winter plan depends more on light and temperature than on a simple planting date.

Potential winter offerings include carrots, beets, cabbage, leeks, kale, spinach, storage onions and garlic, potatoes, sweet potatoes, winter squash, apples, dried beans, herbs, preserves, honey, eggs, and value-added products allowed under local rules.

High tunnels can shelter crops from precipitation and wind, but sunny winter days may overheat them. Ventilation, water access, snow load, anchoring, and backup plans matter. Double covers create another layer of protection but add labor and must be kept from damaging leaves.

Storage is a crop-management system of its own. Cure onions, garlic, sweet potatoes, potatoes, and squash according to their needs. Sort out damaged items. Manage temperature, humidity, airflow, light, and rodents for each group. Inspect regularly and record loss. Do not place every storage crop in one room for convenience if their conditions conflict.

Use succession planting to create a reliable stand

Succession planting can mean sowing the same crop repeatedly, planting varieties with different maturity dates, replacing one crop with another, or pruning and harvesting a crop to extend production. Use the method that matches the crop.

A fixed “every two weeks” schedule is easy to remember but can produce uneven results. Spring lettuce may take much longer than summer lettuce, and mid-summer lettuce may struggle entirely. Adjust intervals with temperature, day length, variety, and sales.

Track:

  • Sowing date and quantity
  • Germination and transplant quality
  • Planting date and bed
  • First and final useful harvest
  • Marketable yield
  • Labor and customer demand

After a season, calculate how much bed space is needed to supply a typical open day. Add a modest buffer for weather and loss, not a second farm's worth of inventory.

Interplant without creating a harvest problem

Interplanting uses space or time between crops. Radishes may mature before a slower crop closes its canopy; lettuce may grow between young brassicas; quick flowers or herbs may occupy bed ends. The idea works when light, water, nutrients, pest management, and harvest access remain practical.

Avoid combinations that look efficient on paper but force workers to step over one crop to harvest another. Consider how row cover, cultivation, trellising, and spray access will work. Interplanting should simplify land use without making records or food-safety practices confusing.

Rotate plant families and management demands

Crop rotation helps distribute nutrient demand and interrupt certain pests, pathogens, and weeds. Group crops by botanical family, but also note root depth, planting method, residue, cultivation, and harvest traffic.

A heavy-feeding, long-season crop followed by another similar crop may strain the soil even if they are unrelated. A root crop may suffer in rough residue left by its predecessor. A late crop may leave no time for the cover crop you intended.

Map every planting, including failed ones. Use the map when choosing where to place next season's tomatoes, cucurbits, brassicas, alliums, legumes, and roots. Where long rotations are impossible, add sanitation, resistant varieties, clean transplants, soil testing, and other targeted controls.

Match volume to the farmstand, not the seed packet

Work from desired weekly sales. If the stand typically sells 30 bunches of carrots, estimate the bed length, germination, cull rate, and harvest window needed to supply that amount. Plant the next succession based on how long the first is expected to remain marketable.

Anchor crops draw traffic; supporting crops make the trip worthwhile. A midsummer stand might center on tomatoes and sweet corn while offering onions, herbs, cucumbers, flowers, and recipe bundles. In fall, pumpkins may lead while greens, apples, squash, and storage roots round out the table.

Create a harvest and postharvest calendar

Planting is only half the schedule. Add expected harvest days, crew needs, wash-pack capacity, cooler space, stand hours, and delivery commitments. If five crops mature on the same morning but the wash station handles two, quality will suffer.

Write crop-specific handling notes. Some products should be washed; others store better dry. Some need rapid cooling; others can be damaged by very cold storage. Use clean, appropriate containers, protect produce from direct sun, maintain food-safety practices, and rotate inventory.

Log what was harvested, sold, donated, carried over, composted, or discarded. Shrink often reveals a planning issue: oversized bunches, too many successions, unsuitable storage, unclear displays, or stand hours that miss customers.

Build next year's calendar from this year's evidence

At the end of each crop, record the variety, supplier, bed, dates, yield, quality, pests, weather problems, labor, sales response, and whether you would grow it again. Add a photograph. Notes such as “good tomato” are not enough; “held flavor during heat, cracked after rain, sold out in two-pound baskets” can guide a decision.

Review the calendar by season:

  1. Which product first drew customers?
  2. Where did the display have a recurring gap?
  3. Which harvest collided with another labor peak?
  4. What occupied ground without paying for its care?
  5. Which variety tolerated the season unusually well?
  6. Which product could have sold more with another succession?

Make next year's first draft while these details are fresh. Then confirm seed availability, rotation, and finances during winter.

A seasonal plan is a living plan

Weather will move dates. Pests will change priorities. A restaurant may request more herbs, or farmstand shoppers may suddenly discover a variety you expected to be niche. The answer is not to ignore the plan; it is to update it visibly and preserve the reason for each change.

Start with local frost and soil information, plan backward from realistic sales windows, stagger the crops that need staggering, and give harvest and storage the same attention as planting.
